Delicious and Moist Banana Nut Bread Recipe

Great for on the go or a late night snack! I love this moist banana bread with honey and butter for breakfast!

I’m one of those people that has a hard time eating early in the morning. Since my work starts at 4 am, I usually end up skipping breakfast all together which leads to stomach pain by lunch. Can you relate? Well I have a solution for you, my moist banana bread recipe. My recipe is moist, light and with just the right amount of sweetness and spice! It’s easy enough for me to toast a slice in the morning with some butter and honey. It always hits the spot and my stomach likes it, which is the best part. It’s easy to make and I think you’ll like it too!

Here we go:

Step 1 Banana Nut Bread
Pre-heat your oven to 325 degrees F. Grease 2 large loaf pans (or 3 smaller ones like me, whose too impatient).

Step 2 Banana Nut Bread
In a stand mixer cream together 1 stick (8 Tbs) of softened unsalted butter and 1 cup of sugar.

While the mixer is creaming get out 2 bowls. In the first bowl add 2 cups of All Purpose Flour, 1 tsp baking powder, 1 tsp baking soda, and 1 tsp salt

In the second bowl add 3 ripe bananas, 1 Tbs milk, 1 tsp cinnamon, 1 tsp vanilla, 1/8 tsp nutmeg, 1/4 tsp cloves. (Quick Tip: If you need to, you can store bananas peeled in the freezer. I like to portion them into Ziploc bags so they don’t get messy. Then just let them thaw before you use them.)
Step 5 Banana Nut Bread
Grab a fork and stir the dry ingredients together.

With the same fork (less dishes to wash lol) mash the banana mixture.

You want to mash the bananas so it creates a nice amount of liquid. If you like chunks in your bread you can either leave it chunkier than this or leave out a banana for the end.

Now that you’ve got your 2 bowls taken care of, we head back to the mixer. Stop the mixer and scrape down the sides.

Add in 2 eggs, 1 at a time to the creamed butter and sugar.

Make sure to scrape down the sides so it can mix evenly. As you can tell there’s still some white butter so I’ll turn my mixer on for a few more seconds to get it incorporated.

Once your eggs are incorporated, add in the banana mixture.

Mix the banana mixture until it’s thoroughly mixed. As you can tell there’s no big chunks of bananas. Remember when I talked about wanting it chunky. Well if you only did 2 bananas in your previous mixture then this is where you can add in a sliced banana to make your bread chunky.

Next you’ll add in your flour mixture and mix just until most of the flour is incorporated. I circled some spots where I left the flour visible and I’ll show you why on the next step.

I will then take it out the mixer and finish the mixing by hand. This is where you can add any pecans, walnuts, or even chocolate. And since I didn’t over mix it with the stand mixer, the bread will stay nice and moist. For an exact amount I stirred it 5 times with my spatula (just fyi lol)

I added about 1/2 cup of chopped pecans (or anything you’d like). I love using the pampered chef chopper, it makes it so easy lol

Next Steps:

The last step is to pour or scoop the batter into your prepared loaf pans. I filled them about half way. Then I cooked them for about 30 mins (at 325 F). My oven is a bit finicky so I would check yours at 25 and then go at 5 min increments. I always do that with any recipe because you just never know lol. One sure way to tell if it’s done is to stick a toothpick straight down the middle and make sure that there is no batter stuck to it. If there is just pop your loaves back in the oven for a few mins until done. Let cool for 10 mins, then pop them out onto a rack to cool. I hope you guys enjoy it!

(P.S This bread is great the next morning toasted with some butter and honey, omg super good!)
